If You’re a Fan of Starbucks’ Egg White Bites, Here’s How To Make Them At Home



If you’re a fan of Starbucks’ egg white bites, but you don’t want to shell out $5 for them, here’s a quick and easy recipe that will let you enjoy them at home for a lot less. The key to the recipe’s ease is using egg whites from a carton — they work just as well as fresh-cracked eggs. That means you can quickly whip up these egg white bites, without the fuss of cracking eggs and worrying about what to do with the leftover yolks. Egg white bites are the perfect make-ahead solution for busy mornings, and you can have them ready in your refrigerator for a quick, protein-rich snack on the go. The following recipe serves 12. 

 

Ingredients 

  • • 1½ cups egg whites 
  • • 1¼ cups cottage cheese 
  • • 1¼ cups shredded Monterey Jack or Mozzarella cheese 
  • • 3 tablespoons unsalted butter, melted and cooled slightly 
  • • 2 tablespoons cornstarch 
  • • ½ teaspoon salt 
  • • ½ teaspoon hot sauce, such as Tabasco 
  • • 3 tablespoons diced roasted red bell pepper from a jar (drained)  
  • • 2 scallions — dark green parts only — thinly sliced 

 

Directions 

  • • Preheat the oven to 350ºF and set one oven rack in the middle position and another in the lowest position. 
  • • Bring a kettle of water to boil. 
  • • Place a 9X13 metal or ceramic baking dish on the lower rack and fill it halfway with the boiling water from the kettle. This will create steam in the oven to gently cook the egg bites. 
  • • Spray a nonstick muffin pan with cooking spray. 
  • • Combine egg whites, cottage cheese, Monterey Jack or mozzarella cheese, butter, cornstarch, salt, and hot sauce. Manually or using a blender, mix until completely smooth — 30 seconds to a minute. 
  • • Pour the egg mixture evenly into the muffin pan, filling each until almost full. 
  • • Sprinkle the roasted red bell peppers and scallions evenly over the batter, using a spoon to press them down so they’re not floating on top. 
  • • Bake for 20-25 minutes on the middle rack until the eggs are set. 
  • • Remove the egg bites from the oven and let them rest in the pan for 5 minutes. 
  • • Using a small spoon to loosen the egg bites, remove them from the pan and place on a plate. 
  • • Serve warm.
