You don’t need a laundry list of ingredients and all afternoon to make a filling and delicious meal. Planning ahead is crucial, but that doesn’t have to mean spending all weekend cooking ahead. Here’s a quick and easy meal that only contains five ingredients can be pulled together in under the time it takes to pick up something from a fast-food restaurant. Cacio e Pepe — or spaghetti with cheese and pepper — is a quick and filling dish that everyone in your family will love.
Ingredients
- * ½ pound spaghetti
- *2 tbsp olive oil
- *2 tbsp unsalted butter
- *2 tbsp coarsely ground pepper
- *4 oz grated Parmesan cheese or Pecorino Romano cheese
Directions
- 1. Bring a large pot of salted water to boil and cook pasta for one minute less than the package instructs.
- 2. Save 1 cup of pasta water, and then drain the pasta.
- 3. Heat a large sauté pan over medium heat and add the olive oil, butter, and pepper. Stir to combine.
- 4. Stir in the reserved pasta water.
- 5. Toss in the cooked pasta and reduce the heat to low.
- 6. Add the cheese and toss until it’s melted and the pasta is well coated.
