This trick works best on roasted potatoes after they’ve been boiled. The lemony kick will give your spuds a fresh and bright flavor, while toning down the saltiness. If you don’t have a lemon on hand, a little white wine vinegar will also do the trick. The best thing to do to prevent a salt overload is to taste your dish periodically during cooking to make sure the seasoning is just right.
