We’ve all heard about the development of lab-grown meat and other alternatives to conventional meat, but most people thought the reality of that happening was still years away. It turns out that it’s not years away but here now. Steakholder Foods Ltd., a company specializing in 3D-printing technology for whole cuts of plant-based meat, is launching its Perfecta Premium Plant-Based Meat at stores throughout the Northeastern U.S. The company hasn’t revealed an exact launch date yet, but shoppers should start seeing it on shelves before the end of the year. Perfecta aims to tackle some of the biggest sticking points for plant-based meat: taste, texture, and recreating the overall experience of eating the real thing. Its initial lineup includes marbled steak, filet mignon, chicken breast, salmon patties, and white fish patties. Perfecta designed each product to replicate the sensory experience of its conventional counterpart, including tender, fibrous textures and marbling-like features intended to improve flavor and juiciness while retaining the nutritional benefits of plant-based meat.
