Ingredients:
• 1 cup large-curd cottage cheese
• ¼ cup pure maple syrup
• 1 tsp vanilla
• 1 cup almond flour
• 2 tbsp melted coconut oil
• ½ cup vanilla protein powder
• ½ cup chocolate chips, plus more for topping
Directions:
- • Preheat oven to 350º F.
- • Line a baking sheet with parchment paper.
- • In a blender or mixer, add cottage cheese, maple syrup and vanilla and blend on high until smooth.
- • In a mixing bowl, combine almond flour and protein powder.
- • Add coconut oil and cottage cheese mixture and stir until combined.
- • Fold in chocolate chips.
- • Scoop dough onto baking sheet and flatten with your hand to form a cookie shape.
