Healthy Flourless Fresh Apple Bread

If you want healthy apple bread but don’t want all the additives that are found in most commercial brands, this is the recipe for you. It’s a delicious and simple recipe made without sacrificing flavor or texture. The best part of it is that there’s no flour needed, it’s sweetened with honey, and loaded with fresh apples. It’s quick to make and tastes great.

Servings: 10

Ingredients:
  • • 3 medium apples (whatever variety you like)
  • • ¼ cup honey (or substitute of your choice)
  • • 2 cups old-fashioned or quick-cooking oats
  • • 2 large eggs
  • • 1 tsp vanilla
  • • 1 tsp baking soda
  • • 1 tsp cinnamon

Directions:
  • • Preheat oven to 350º F.
  • • Lightly grease 9X5-inch loaf pan with nonstick cooking spray and set aside.
  • • Core and slice the apples. No need to peel unless you want to.
  • • Add all the ingredients into a food processor or blender and blend until smooth and well combined. Try not to over-blend the batter, as this will cause the oats to warm and start cooking into oatmeal, which will hinder the loaf from baking into a bread-like texture.
  • • Pour batter into prepared loaf pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • • If the loaf starts to brown more on the top before the center is done, place a piece of foil over it until it’s baked all the way through.
  • • Let loaf cool completely in loaf pan.
  • • Store in an airtight container in the refrigerator.
