This Cheddar Bay Biscuit Chicken Cobbler Will Save the Day



When it comes to TikTok, you never know what you’re going to see. From crazy challenges to viral recipes, the social media platform has something for everybody. Now there’s a great recipe that’s making the rounds, and if you haven’t tried the TikTok Cheddar Bay Biscuit Cobbler yet, you’re in for a real treat. This comfort food mashup combines two beloved classics: chicken pot pie and Red Lobster’s famous Cheddar Bay Biscuits. It's perfect for feeding a crowd or saving the day when you’re running late and don’t have a lot of time to fix dinner. This cozy casserole delivers all the favors without requiring a lot of effort. 


Servings: 6

Ingredients:

  • • ½ cup (1 stick) unsalted butter
  • • 4 cups shredded chicken
  • • 2 cups milk
  • • 1 (11.36-ounce) box Red Lobster Cheddar Bay Biscuit Mix (including seasoning packet)
  • • 1 (12-ounce) bag frozen peas
  • • 1 (12-ounce) bag frozen corn
  • • 2 cups chicken stock
  • • 1 (10.5-ounce) can cream of chicken soup
  • • 1 cup shredded cheddar cheese (optional)

Directions:
 
  • • Preheat the oven to 350°F. 
  • • While the oven preheats, place the stick of butter in a 9×13-inch baking dish and let it melt in the oven. Keep an eye on it to ensure it doesn’t burn. 
  • • Once the butter is melted, remove the dish from the oven and swirl the butter around to coat the bottom evenly.
  • • In a medium mixing bowl, combine the milk, Cheddar Bay Biscuit Mix and the seasoning packet that comes with it. Whisk until smooth and set aside.
  • • Spread the shredded chicken evenly across the bottom of the buttered baking dish. 
  • • Scatter the frozen peas and corn evenly over the chicken. 
  • • If using shredded cheddar cheese, sprinkle it evenly over the vegetables.
  • • Pour the prepared biscuit batter evenly over the chicken and vegetable layer. Do not stir or mix the layers. This ensures the biscuit topping bakes properly.
  • • In another bowl, whisk together the chicken stock and cream of chicken soup until smooth. 
  • • Gently pour this mixture over the biscuit batter, ensuring an even distribution. Again, do not mix.
  • • Place the dish in the oven, uncovered, and bake for 45 minutes. Check for doneness — the biscuit layer should be golden brown and set.
  • • Once done, remove the casserole from the oven and let it sit for about 15 minutes. This allows the layers to set and makes serving easier. 

Notes:

  • • Sprinkle garlic powder, paprika, or Italian seasoning over the top before baking for added flavor.
  • • Use Bisquick, Jiffy or Krusteaz as a substitute for Red Lobster Cheddar Bay Biscuit Mix. Just add garlic powder, onion powder, and cheddar for a similar flavor.
  • • Use a gluten-free biscuit mix for dietary needs.
  • • For variations, substitute chicken with cooked turkey or diced ham.
