Old-Fashioned Coca-Cola Cake is a Big Hit



Who doesn’t love a good cake? It’s likely that the last ingredient you would expect to find in a cake recipe is Coca-Cola, but this cake is perfect for dinner parties, potlucks, and gatherings. It makes a rich and delicious chocolate cake, and it’s always the first dessert to go at a barbecue. The important thing to remember is…….no substitutions! This cake will absolutely NOT work with Diet Coke, Coke Zero, or any other sugar-free variety. 

INGREDIENTS

  • •1 can of Coca-Cola 
  • • 2 cups of all-purpose flour 
  • • 1 cup granulated sugar 
  • • 1 cup brown sugar 
  • • 1 teaspoon baking soda 
  • • ½ teaspoon cinnamon 
  • • ¼ teaspoon salt 
  • • 1 cup butter 
  • • 1 cup Coca-Cola 
  • • ½ cup buttermilk 
  • • ¼ cup unsweetened cocoa powder 
  • • 2 eggs 
  • • 1 teaspoon vanilla extract

FROSTING

  • • ½ cup butter 
  • • ½ cup Coca Cola 
  • • ¼ cup unsweetened cocoa powder 
  • • 3 cups powdered sugar

DIRECTIONS

  • • Preheat oven to 350º. 
  • • Spray a 13" x 9" baking pan with baking spray and dust with flour. 
  • • In a bowl, mix together flour, white sugar, baking soda, cinnamon, and salt and set aside. 
  • • In a medium saucepan, bring butter, Coke, buttermilk, brown sugar and cocoa powder to a boil over medium-high heat, whisking constantly. 
  • • Remove chocolate from heat and whisk butter mixture into flour mixture until smooth. 
  • • Add eggs and vanilla and mix until smooth. 
  • • Spread batter into a pan and bake for 35 to 45 minutes until a toothpick comes out clean. 

FROSTING 

  • • In a medium saucepan, bring butter Coke, and cocoa powder to a boil over medium heat whisking constantly. 
  • • Remove and gradually whisk in powdered sugar until smooth and pour over cake.
