Tiramisu is an Italian treat that’s easy to mess up if you’re making it at home, but now there’s a fool-proof way you have your snack and eat it too. In the traditional version, the egg-based cream is the most difficult part because it can make or break the dish. It involves separating raw eggs and whipping them to a specific stiffness. Then you have to fold them gently, which is even trickier. You finally finish, only to find out that you did it wrong and made a runny mess. How about if we just take the egg out of the equation? Instead of going through all that nonsense, just replace the eggs with a couple of vanilla pudding cups — yes, the packaged, pre-made vanilla pudding sold in four-packs.
Lazy Cheater’s Tiramisu
Ingredients:
- • 2 double shots espresso (4 ounces)
- • 8 ounces heavy whipping cream
- • 1 tablespoon sugar
- • 2 vanilla snack packs
- • 6 ounces mascarpone
- • 12 lady fingers
- • Cocoa powder to garnish
Directions:
- • In a large bowl, whip the heavy cream and sugar to medium peaks.
- • In a different large bowl, thoroughly mix together the snack packs and mascarpone cheese with a rubber spatula.
- • Fold in the whipped cream.
- • Dip both sides of a lady finger cookie in the espresso, break it in half, and place it in the bottom of a dessert glass.
- • Repeat this in two other dessert glasses.
- • Add a scoop of the cream mixture to each glass.
- • Repeat the layers until the glasses are full, ending with a scoop of the cream.
- • Top with a dusting of cocoa powder.
- • Let the tiramisu cups set in the fridge for at least 2 hours before serving.
