Ingredients:
- • 6 bacon slices, diced
- • 3 cups potatoes, peeled and cubed
- • 1 small carrot, grated
- • ½ cup chopped onion
- • 1 tbsp dried parsley flakes
- • ½ tsp salt
- • ½ tsp pepper
- • ½ tsp celery seed
- • 1 14½-oz can chicken broth
- • 3 tbsp all-purpose flour
- • 3 cups 2% milk
- • 8 ounces cheese, cubed
- • 2 green onions, thinly sliced (optional)
Directions:
- • In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally.
- • Drain bacon and set aside.
- • Add vegetables, seasonings and broth and bring to a boil.
- • Reduce heat and simmer, covered, until potatoes are tender, 10-15 minutes.
- • Mix flour and milk until smooth and stir into soup.
