Ingredients:
- • 8 large eggs
- • ¼ cup milk or milk substitute
- • 1 tbsp extra virgin olive oil
- • ½ cup onions, diced
- • 2 garlic bulbs, minced
- • 2 cups kale, chopped
- • 1 cup broccoli
- • ½ cup cilantro, optional
- • ½ cup salsa verde
- • Salt and pepper to taste
Directions:
- • Preheat oven to 350º F.
- • Heat extra virgin olive oil in an oven-safe skillet over low/medium heat.
- • Add onions, garlic and veggies and saute, stirring occasionally until softened, about 4-6 minutes.
- • Whisk eggs in a medium bowl with milk, salt/pepper, herbs and salsa verde.
- • Pour egg mixture into the pan and cook, stirring occasionally, until edges pull away from the sides of the pan, about 5 minutes.
