Go Green — Crustless Vegetable Frittata

Ingredients:
  • • 8 large eggs
  • • ¼ cup milk or milk substitute
  • • 1 tbsp extra virgin olive oil
  • • ½ cup onions, diced
  • • 2 garlic bulbs, minced
  • • 2 cups kale, chopped
  • • 1 cup broccoli
  • • ½ cup cilantro, optional
  • • ½ cup salsa verde
  • • Salt and pepper to taste

Directions:
  • • Preheat oven to 350º F.
  • • Heat extra virgin olive oil in an oven-safe skillet over low/medium heat.
  • • Add onions, garlic and veggies and saute, stirring occasionally until softened, about 4-6 minutes.
  • • Whisk eggs in a medium bowl with milk, salt/pepper, herbs and salsa verde.
  • • Pour egg mixture into the pan and cook, stirring occasionally, until edges pull away from the sides of the pan, about 5 minutes.
  • • Transfer skillet to the oven and bake until set, 10-15 minutes.
