One thing that can be said about Christina Ardolino is that she absolutely loves animals. Last week, for the fifth year in a row, she prepared a backyard Thanksgiving spread for the squirrels who visit her, and the menu was unreal. She says it typically takes her 2-3 hours to prepare all the miniature treats, which include peanut butter and walnut pancakes, peanut butter and banana quesadillas, bananas tossed in a walnut crumble, peanut butter cookies frosted and decorated with sunflower seeds, pecan pie, a layered peanut butter banana walnut cake, peanut butter filled cones topped with pecan crumble, and a side of sliced grapes, walnuts and pecans. Christina said she regularly feeds the squirrels an assortment of mixed nuts, but goes big for the holidays. “Every living being deserves to feel love, and that’s my way of sharing it,” she said.
