The Flesh-Eating Pineapple



How can you tell if someone works with pineapples? They will have no fingerprints. That because pineapples and pineapple plants contain a certain enzyme known as bromelain, which is good at digesting proteins. It doesn’t just denature them like cooking does, when bands of proteins are separated and loosened. It actually chops them into smaller bits. This action happens when any protein comes into contact with bromelain. So, when workers touch the stems or process the pineapple plant juices, the sap literally starts to digest their fingerprints. This action also means that pineapple juice is a good meat tenderizer. In fact, a lot of powdered meat tenderizers contain bromelain. Beware, though — pineapple can make your mouth feel raw if you eat too much of it.
